Pumpkin Spice Pancakes!
Start with your basic pancake and waffle mix or a homemade version of the same. Add more texture with flaxseed meal, wheat germ and wheat/oat bran. Stir in canned pumpkin, LOTS of pumpkin pie spice (make sure your mixture has ground clove) and a bit of molasses. Trust me about the molasses, but not too much. Molasses brings the rich color and essence, but can easily be over done, so be careful (2 Tablespoons in a batch).
