Try this if your fresh veggies are past their prime
I bought snap peas at Meijer yesterday afternoon. I cleaned them and tucked them into the fridge in a “Lettuce Wrap”* I taste tested one this morning and discovered they were stringy and tough! Aargh!
Rather than return them to Meijer, I decided to try something new. I roasted them in a hot oven, 450°, for about 10 to 15 minutes, until they were dark and crispy. I sprinkled them with Greek seasoning, and Voila! A satisfying little snack!
This once again proves my hunch that all vegetables are improved by roasting! I hope you’ll try it too!
